“We’ve found that more and more guests ask for vegetarian, gluten-free, or lactose-free options, and our menu provides already a very health-oriented variety of locally grown products,” Area 31’s executive chef, Wolfgang Birk, explains about the decision to launch the menu.

“Ninety percent of our produce comes from local farms, which is a great starting point for this menu. I also believe that with global warming and the continued challenges on availability and price increases on seafood and meat, menu offerings will begin changing.”

Here are the five courses Birk developed for the menu:

  • Palmitas tartar: smoked oyster mushroom, cerignola and frisee
  • White asparagus veloute: treviso and apple
  • Sunchoke agnolotti: Brussel leaves and rum raisins
  • Black Bass: fagolet and escarole
  • Persimmon boboloni: goats milk creme anglaise

To spice things up, he plans to change the menu options every few weeks. In the meantime, those oyster mushrooms are calling.
