87. Poulet Rouge at Cecconi’s Miami Beach
The poulet rouge is a pricey, all-grain-diet chicken modeled after the Label Rouge breed of France. At Cecconi’s Miami Beach, chef Sergio Segala (formerly of Casa Tua) cooks the chicken in a wood-burning oven — the resultant skin crisp, the meat moist, tender, and touting deep poultry flavor. The half-chicken portion is presented pooled with jus and crowned with wispy shavings of black truffle; mashed potatoes come alongside. The outdoor garden dining room, with retractable-roof, is as romantic as they come. Price for this stellar dish in gorgeous environment? $25.
