Paula DaSilva, chef de cuisine at Dean Max’s 3030 Ocean, will leave the Fort Lauderdale seafood restaurant in June to head a new restaurant at the Eden Roc. If you don’t know DaSilva from 3030 Ocean, you may remember her for coming in a close second in season five of Gordon Ramsay’s Hell’s Kitchen.
According to DaSilva, the Eden Roc is reconceptualizing its restaurant, Gia Italian Kitchen and Wine Bar, and contacted her to head the new concept — a yet-to-be-named steakhouse.

challenge too.”
DaSilva will spend her summer redoing menus and hopes the new restaurant will debut in the early fall. The restaurant will also undergo
a redesign.
As for 3030 Ocean, DaSilva says sous chef Jeremy Ford will likely take
her spot as chef de cuisine.
The restaurant will hold a farewell dinner for DaSilva on May 24. View
