The Pubbelly Group already owns five restaurant concepts and two pop-ups. But soon it will have something more.

Partners Andreas Schreiner, Jose Mendin, and Sergio Navarro — the crew behind Pubbelly, Pubbelly Sushi, PB Steak, Macchialina, and Barceloneta — are scheduled to run food and beverage operations at the Hilton Cabana Miami Beach, a hotel that will be located at 62nd Street and Collins Avenue. The hotel will be home to their latest restaurant.

“We will run pool service and room service for the hotel, but the restaurant, called L’Echon, will be our main focus,” Mendin says.

The restaurant will be, as Mendin puts it, “a Pubbelly-inspired brasserie.”

“The restaurant’s name is a play on lechón — as in the Spanish word — and bouchon in French. Like Macchialina, it’s a made-up word,” he says.

Still under construction, the hotel has a scheduled opening date of late 2013. Until then, the Pubbelly boys will continue to develop the details behind their novel space.

“We are still working on the menu, but it’s going to be a sharing-style concept with classic French dishes and a Pubbelly-style environment,” he continues, referring to the group’s signature laid-back environment. “We just wanna do a really cool brasserie.”

And cool is certainly something the Pubbelly boys know how to do.
