“Our menu is already very vegetarian-friendly because Cesar loves working with vegetables,” she says of co-owner Cesar Zapata. “So it was a pretty natural move for us. Quite frankly, it’s more of an honor than a chore to be a top choice for vegetarian diners.”
The menu features a welcome glass of rosé; an avocado tostada with pineapple coriander relish and dehydrated strawberry as the first course; charred maduros with sweet plantain, crispy quinoa, and amaranth as the second course; corn casserole with handmade gnocchi and corn bisque as the third course; truffled grits and exotic mushrooms as the fourth course; and, for dessert, cherry sorbet or chocolate banana s’mores.
The tasting menu costs $65 per person, plus $35 for cocktail and wine pairings. They’re taking reservations from 7:30 to 11:30 p.m. Call 305-758-9559 or visit .thefederalmiami.com.
