Gotham Steak at the Fontainebleau Hotel has selected Todd Mark Miller to replace John Suley as its new chef de cuisine. Locals may be familiar with Miller from his stint as opening chef of STK Miami — he was also executive chef of STK New York and opened the STK in LA. Before STK, Miller was chef at Barclay Prime, a famed boutique steakhouse in Philadelphia.

“So what is it about steakhouses that you like so much?” I asked Miller today by phone.

“You know what’s so funny about that? There is nothing that I like about steakhouses,” he answered, and laughed.

But that’s not exactly true. We’ll have an interview with chef Miller tomorrow in which he explains that statement along with his thoughts on cooking, new plans for the Gotham Lounge, and what cut of meat he likes to order when dining at a steak house.
